學前教材中與營養教育有關訊息之內容分析

Content Analysis of Nutrition Messages in Preschool Education Materials

摘要


本研究旨在探討學前教材中,與營養教育有關訊息內容及其呈現方式,以內容分析法進行研究。研究樣本為提供給學前兒童在課堂中使用,與營養教育有關之訊息。研究結果發現,學前兒童營養教材,涵蓋了18項與營養教育有關訊息類目及6種訊息呈現方式;其中出現次數最多的三項營養教育訊息為「認識食物」(n=222,25.2%)、「喜愛、讚美食物」(n=180,20.5%)與「食物製作」(n=139,158%);18項與營養教育有關訊息中,直接與健康飲食有關的訊息,出現的百分比都偏低,其中較常出現的訊息有「食物的功能」(n=50,5.7%)、「食物的選擇」(n=41,47%)及「均衡飲食」(n=31,3.5%)。在6種營養教材呈現方式中,以歌謠所佔百分比最高(n=142,37.0%),講述方式次之(n=127,33.1%),顯示營養教材仍以傳統說唱方式,作為傳達營養教育訊息的主要方法。研究結果將從學前營養教育內容及訊息呈現方式的適切性作討論。

The purposes of this study were to describe the contents of nutrition messages in preschool education materials, and the methods used to demonstrate these messages. A content analysis methodology was selected for this study. The samples included nutrition messages conveyed in printed education materials which were provided to preschool children as a part of the school curriculum. The research findings are as follows. There were 18 nutrition message categories and six kinds of demonstration methods to convey the nutrition materials. The most frequently conveyed nutrition messages in the preschool educational materials were ”food identification” (n=222, 25.2%), ”enjoying food” (n=180, 20.5%) and ”food production” (n=139, 15.8%). It was found that percentage of preschool nutrition messages directly related to healthy eating was low. The more-frequently seen messages directly related to health eating were ”food function” (n=51, 5.8%), ”food choices” (n=41, 4.7%) and ”eating variety food” (n=31, 3.5%). Songs and rhymes were the methods used most often to convey nutrition messages (n=142, 37.0%). Narrative was next (n=127, 33.1%). The results of the study are discussed in terms of the appropriateness of nutrition education for preschool children.
