台灣地區大學生屬性對營養知識、飲食態度與飲食行為之影響

The Impact of College Students' Attributes on Nutrition Knowledge, Dietary Attitudes, and Dietary Practices in Taiwan

摘要


本研究的目的在探討台灣地區大學生屬性對營養知識、飲食態度、飲食行為之影響。由台灣本島北中南東各區分層選取共53所大學院校、1762名學生為研究對象,採用問卷調查法蒐集資料,問卷內容包含:營養知識、飲食態度、飲食行為、健康行為、個人資料等五部分,所得資料以敘述性統計、t-檢定、單因子變異數分析與Scheffe事後檢定、Pearson相關分析等進行分析。結果顯示台灣大學生在營養知識與飲食態度方面表現尚可,但在實際的飲食行為僅及格而已,且均以女生的表現顯著比男生好。個人籍貫、學校所在地區、人口密度、學校類別、所學領域、個人月收入等屬性會影響營養知識;性別、年齡、年級、住宿狀況、每日伙食費等屬性會影響飲食行為。採取素食、不飲酒、不抽菸、服用營養補充劑、每日排便等力行健康行為者,其飲食行為的平均分數較高。大學生之營養知識、飲食態度、飲食行為三構面之間的表現並無顯著相關。

The purpose of this study was to analyze the impact of college students' attributes on their nutrition knowledge, dietary attitudes, and dietary practices in Taiwan. A survey questionnaire consisting of nutrition knowledge, dietary attitudes, dietary practices, health behaviors, and demographic information was distributed. In total, 1762 valid questionnaires were collected from 53 colleges located in different parts of Taiwan. Data were analyzed using descriptive statistics, t-test, ANOVA, Scheffe's test, and Pearson correlations. Results of the standardized score showed that students' nutrition knowledge and dietary attitudes were 75 and 81 on a 100-point scale, respectively, which were about normal. However, the score was 63 for dietary practices, which was barely satisfactory. When comparing the results between genders, female students had higher scores on all three scales than their male counterparts. For all participants, nutrition knowledge was influenced by the county of one's family registry, school location in Taiwan, population density of the school location, type of school system, students' field of study, and participants' personal monthly income. Dietary practices were influenced by students' gender, age, class year, housing status, and daily food expenses. Students who were vegetarians, non-drinkers, non-smokers, nutrient/supplement takers, or had daily bowel movements tended to have higher mean scores on dietary practices than their counterparts. Students' nutrition knowledge, dietary attitudes, and dietary practices were not significantly correlated.
