Because the quality decrease of Wax apples was primarily due to collision, vibration, compression and/or fraction influences during transportation, the fruit packing technology should be improved to reduce the damage. This study investigated the force relaxation properties of Wax apple using a texture analyser. The experimental results showed that the Wax apples behaved as a viscoelastic material. The relaxation time decreased as the strain rate and initial stress increased. The generalized Maxwell model with three parallel units was better in representing the force relaxation characteristics of Wax apples than the three-element model. Finally, we established an theoretical model to estimate the stress relaxation property of Wax apples.
