復水金針加工條件對產品品質之影響

Effects of Processing Conditions on the Quality of Rehydrated Day-Lily Products

摘要


本研究目的在測試金針乾製品復水加工過程中原料之二氧化硫殘留量、復水溫度及時間與熱燙時間對復水金針產品品質(含水率、二氧化硫殘留量、顏色、脆度等)之影響,以提供加工業者有關復水金針加工產品開發之參考依據。浸泡復水過程中,金針樣品之含水率、二氧化硫殘留量、顏色、脆度隨浸泡時間而改變,而浸泡溫度亦明顯影響復水金針之含水率及二氧化硫殘留量。復水金針脆度隨其含水率而變化,浸泡復水初期因金針乾製品吸收水份而逐漸軟化,之後則隨含水率增加而增加。熱燙時間明顯影響金針之含水率及二氧化硫殘留量,金針二氧化硫殘留量隨熱燙時間增加而降低,熱燙液二氧化硫殘留量則隨熱燙時間增加而逐漸升高。以低二氧化硫殘留量樣品為例,高達64~82%之二氧化硫會汽化流失。較合理之浸泡復水加工條件為:以25℃浸泡40 min後,再進行1 min之熱燙。

This study was to investigate the effects of sulfur dioxide residue, rehydration temperature and time, and scalding time on the quality of rehydrated day-lily products. In the rehydration process, the moisture content, sulfur dioxide residue, color, crispness changed with the rehydration time. Besides, the rehydration temperature significantly affected the moisture content and sulfur dioxide residue. The crispness of rehydrated day-lily changed with the moisture content. In the beginning of the rehydration process, dried day-lily samples absorbed moisture and became softer, and then the crispness of rehydrated day-lily increased with increasing moisture content. Scalding time significantly affected the moisture content and sulfur dioxide residue. The sulfur dioxide residue decreased with the scalding time. Meanwhile, the sulfur dioxide residue of scalding solution increased with the scalding time. During the process, 64~82% of sulfur dioxide vaporized from the samples with low sulfur dioxide con tents. The optimum processing conditions are: 40 min soaking at 25℃and 1 min scalding.
