本研究依據教保人員需求,設計簡易餐飲衛生指導手冊為教材,進行教育介入計劃,並評估介入後的立即效果,及三個月後教育效果的維持狀況。由台南地區規模在150名以上托育學童的托兒中心中選取六所餐飲衛生現況評估等級相似,及所屬教保人員具有相當的餐飲衛生知識與態度之前測分數的托兒中心,隨機分配三所為實驗組,三所為對照組,每所中的教保人員都列為樣本。樣本於餐飲衛生教育介入後及介入三個月後,分別填寫問卷。結果顯示餐飲衛生教育介入能提昇教保人員的餐飲衛生知識分數,且三個月後知識分數仍持續進步;但教育介入對於教保人員餐飲衛生態度分數的改善不顯著。建議各界學者合作參與餐飲衛生教育,提供更豐富的教材與課程計劃。
Based on the needs of caregivers, a food hygiene education intervention program was conducted to promote the food hygiene knowledge and attitude of caregivers in preschools. Six preschools in the Tainan area with over 150 preschool children, similar food hygiene status, and comparable scores of knowledge and attitude on food hygiene were selected. Three of the six preschools were randomly assigned as the experiment group, and the other three as the control group. Two questionnaires about the food hygiene knowledge and attitude of the caregivers were answered by all the subjects to evaluate the effect of the education intervention. The first one was carried out when the program began, and the other, three months later. The results show that this education program significantly improves the food hygiene knowledge of caregivers in preschools. However, the progress of their food hygiene attitude was not obvious. It is suggested that researchers and scholars from various fields (such as food safety, education and psychology) collaborate to design a curriculum and teaching materials for food hygiene education programs in preschools.
