本研究爲瞭解目前台灣地區有關餐飲研究之現況,藉由對既有研究的文獻回顧,指出以往研究的重要特性,並以此爲基礎,建議未來可能的研究方向,以提供有興趣參與餐飲研究者參考。針對1978至2004年發表的210篇餐飲研究相關博碩士論文,進行內容分析之後,我們發現「研究議題」的焦點仍主要在人力資源,其次爲經營管理,而消費行爲與服務品質亦佔相當比例,其他的論文主題中,餐飲安全爲食品科學及公共衛生系所關切之所在,而空間結構與認知則爲建築與景觀系所的切入面向;從主題的變遷可以看出餐飲業發展的趨勢。「研究範圍」及「分析單位」依主題而有差異,在人力資源部分有相當的研究對象均在學校,或從知識、或從態度、或意願來分析學校教育與實質就業需求間的關連。「研究類型」仍以調查研究法爲主,輔以訪談的策略分析,未來則可強化觀察的應用,發展關於實驗法的研究,藉由特定項目的控制與觀察,來更深入瞭解某些策略或規劃所產生的效應。「分析方法」多爲基本的敘述統計及相關分析,除應加強方法應用的基本前提認知及精準度,以免誤用工具造成錯誤的推論結果外,或可透過個案研究或行動研究的質化分析,使餐飲管理的理論與實務都有更好的成長。
This study aims to understand the status of the existing hospitality research in Taiwan. It addresses the importance of the papers and provides suggestions for future study. Content analysis is employed to investigate 210 dissertations from 1978 to 2004. The results are as follows: Human resource research is dominate, followed by management, consumer behavior and service quality. Besides, catering and food safety is the concern of food science and public health. The architecture and landscape approach focus on space construction and cognition study. The trends and development of hospitality industry reflect on the transition of research issues. Research scopes and units vary with the research issues. The majority of research subjects of the human resource are students. The mode of this study tries to analyze the association between school education and employment by measuring knowledge, attitude and intention. Research methods are dominated by quantitative questionnaires, the next is strategic analysis aided by interview. In the future, observation could be applied and experiment could be developed to better understand the effects and achievements of strategies and planning. Expect for mastering basic descriptive statistics and advanced variant correlation techniques, in order to avoid fallacious results inferred by misused methodology, more efforts should be put in understanding the prerequisites and the accuracy of methodology, to allow theories and practices of hospitality industry to prosper.
