營養教育介入對國小五六年級學童在營養知識、態度及行為成效之探討

Effects of Nutrition Education Intervention on Nutrition Knowledge, Attitude, and Dietary Behavior for 5^(th)-6^(th) Graders

摘要


本研究針對新竹縣國小五、六年級學生於營養教育介入前,利用營養知識、態度、行為量表施行前測,並於營養教育施行後一週施行後測,最後共有1,594 學童進行資料分析。觀察營養教育介入後之學童的營養知識、態度及飲食行為得分是否有差異或因不同性別與區域而有所差異。結果顯示在基本資料,學童人數是男生多於女生,男生與女生體位上均無明顯差異。整體後測之營養知識得分較前測有顯著提升,整體營養態度與飲食行為之得分則無差異。針對不同性別之知識量表得分部分,後測得分顯著均高於前測得分,而不同性別之營養態度及飲食行為量表得分皆無顯著差異。不同區域知識量表得分後測得分顯著優於前測得分,其中知識量表後測得分以鄉地區最高,其次依序為鎮及市,飲食營養態度及行為量表得分則無顯著差異。進一步以共變數分析法比較營養教育介入、不同性別及區域之學童知識、態度及行為後測得分,發現營養教育介入後的營養知識及態度後測得分均有顯著的差異;然而不同性別與區域間無論在營養知識、態度及飲食行為之後測得分均無明顯差異。由本研究結果得知,營養教育對於提升五六年級學童的營養知識與態度有顯著的成效。

The purpose of this study was to access the effects of nutrition education intervention on nutrition knowledge, attitude and dietary behavior for 5^(th)-6^(th) graders in Hsinchu county (n = 1594). The intervention outcomes were measured by questionnaires administered before (pre-test) and a week after the intervention (post-test). Following the educational intervention, a significant increase in nutrition knowledge from pre- to post-test was observed. However, these changes were insignificant between boys and girls indicating that boys' and girls' scores improved similarly from pre-test to post-test. Moreover, analysis by gender or living area revealed no significant differences in mean scores for nutrition attitude and behavior before and after education intervention. More importantly, when ANCOVA analysis was utilized to control the confounding factors, the results revealed that the mean post-test scores for knowledge and attitude showed significant differences. However, no significant difference in the post-test scores for all variables was noted among students of different area groups. Overall, the study indicate that nutrition education has a positive influence on nutrition knowledge and attitude of 5^(th)-6^(th) graders.
