用台菜記憶台灣—《總鋪師》

摘要

《總鋪師》是台灣電影自2008 年由《海角七號》帶起風潮後，最能夠接續《海角七號》所帶起的由電影形塑台灣認同的路線而又能有所突破的電影。因此本論文從對陳玉勳的導演歷程來談其視覺風格、鄉土語言、通俗架構等共同特質，藉以瞭解《總鋪師》的特色與風格，及其能廣受群眾歡迎的原因。電影中的主軸—「台菜」，更是陳玉勳藉之凸顯總鋪師的專業，食物對個人記憶的承載，以及台灣古早歷史與社會文化的重心所在，也因為陳玉勳此一藉台菜由「人」而「家庭」而「社會」的層次，使其「用台菜記憶台灣」的用心得以完整呈現。

The film ＂Zone Pro Site＂ is one of the movies after ＂Cape No. 7＂ that not only continues the localization cognition, but constitutes a breakthrough after the feverish trend which began in 2008. The study aims at understanding the characteristics of Chen Yu-hsun, the film director, his intention, visual expression, local languages and common structure in order to experience the features, style and reasons behind the popularization of the film. The main factor in the movie is the Taiwanese food which reveals the professionalism of banquet masters; it creates individual memories linked to food and the focus of ancient history and social culture in Taiwan. The extension from individual to family to society applied in the film completely reveals the director's intensive thoughts.
