本研究的主要目的是以推動台灣觀光需求為出發點,來發展建構出適合國內夜市服務品質的量表。其主要目的是以餐廳服務品質理論模式為基礎,建立臺灣夜市服務品質的五種假設競爭模式,並藉由競爭模式策略找出與臺灣夜市服務品質測量資料最配適的模式,進而檢驗此最佳模式的信度與構念效度,並發展出本研究的研究工具,共八大構面48 題測量變項,本研究於臺灣十大特色夜市收集資料,共216份有效問卷,隨即以競爭模式與信效度檢核的方式來分析資料,完成量表純化的工作。研究發現以Kim, NG and Kim(2008)所提出之理論模式為最佳模式。研究結果與建議可供日後政府部會推動觀光之施政參考、夜市業者經營策略擬訂與學者進行相關研究時的參考。
The main purpose of this study was to construct a scale as the service quality measurement for foodservice in night market in Taiwan which can give fresh impetus to tourism industry. Based on five theoretical models of service quality, the competing model strategy and confirmatory factor analysis were conducted to decide the best model as the measurement of service quality for night market. The survey instrument consists of eight dimensions and 48 questions and data was randomly collected at top ten night markets elected by ballot. Following the tests of confirmatory factor analysis, reliability and validity, the best model which proposed by Kim, NG and Kim (2008) was identified to fit the expected model. The preliminary results and further research suggestions indicated some evidences that may help government, industry and academic in terms of service quality management.
