Self-Sustaining, Nostalgia and Integration: Small Restaurants Owned by Vietnamese Spouses in Taiwan

摘要


飲食習慣與文化會隨著移民的移動而傳播,這在全球化時期尤為顯著,移民不只帶來其原居地/國的飲食料理特色,也會在其移入地/國進行飲食料理的融合,形成混雜的飲食特色。本文以移居臺灣的越南女性配偶所創設之微型企業或小吃店為例,一方面說明產生背景、經營模式、各類資料的取得,以及其如何透過飲食料理以再現越南認同;另一方面,本文亦討論其在飲食習慣、料理上如何策略性的鑲嵌入臺灣社會與飲食文化中。

Migrants tends to bring their own food habits and culture to the host society where they reside, this is an increasing phenomenon under the flow of people in globalization era. However, migrants not only bring their unique food and cooking style from their country of origins, they also integrate or absorb some culinary elements of the host society. This two-way interaction creates a hybridized food culture among the migrants. In this article, some small restaurants run by Vietnamese Spouses in Taiwan will be examined. We will, on the one hand, examine and illustrate the emergence of these small restaurants, patterns of operation, various capitals employed, and how Vietnamese identity can be represented through the food prepared. On the other hand, the article will also discuss how Vietnamese food habits and culture strategically integrate into the food culture of Taiwanese society.
