In this paper we shall deal with the introduction of Chinese cuisine in Iran. The features of the Chinese cuisine have been collected by identifying and surveying the Chinese Restaurants in Tehran - Iran. By allocating the Chinese restaurants in Tehran -Iran, we will be well acquainted with the form and shape of Chinese cuisine, while emphasizing their changes and transformations in the nutrition culture in Iran. Therefore, the goal of this research is to understand and get acquainted with the Chinese nutrition pattern in Iran and the respective changes and transformations. The research method applied in this paper is qualitative method and has been completed by extensive and deep interviews with the manager, chef, and staff of one of the first restaurant at Tehran. The research has been completed in 2011 and as a result all the data presented are new and up to date. This research demonstrates that Chinese restaurants are just located in the capital that means there are Chinese restaurants only in Tehran and not in the other cities. There are five Chinese restaurants in Tehran and they are located in the upper level areas of the city, where the wealthy class are residing. The first Chinese restaurant named Golden Dragon (Ezhdehaye Talaii) was opened in Tehran about six decades ago in 1959. Although, six decades have passed since the opening of the first Chinese restaurant in Iran; yet there are only five Chinese restaurants in Tehran - Iran. In this paper we shall explain why Chinese restaurants have not been that popular and expanded in Iran although there are numerous Chinese products in Iran. While Chinese food products i.e., apples, grapes, garlic, tomato paste, soya sauce, variety of Chinese noodles, and Tofu are quite common in Iran and have a good market; why Chinese restaurants have not developed in Iran as the other nationals' restaurants? In this paper we shall deal with the variety of Chinese food in the Chinese restaurants in Iran. We shall point out the modifications that have been applied in cooking the Chinese food in this restaurant in order to be more acceptable to the Iranian taste. Furthermore, we shall introduce the most common and popular meals and drinks as well as the manner the Chinese food are served in this restaurant. Meanwhile, we shall present the viewpoints of the Iranian people with regard to Chinese cuisine and what general and particular pre-assumptions they have in this respect. In this paper we shall also deal with the issues, problems, requirements, import of raw material from China, and the Iranian products that are used in Chinese cuisine (food). The key informants in this research are the Chinese chef who is residing in Iran.
