鑑於近年重大食品安全的事件層出不窮,造成民眾飲食的安全問題受到威脅,故本研究以食品安全為標的,從企業倫理與經營績效之構面,探討(1)企業倫理的規範對食品安全事件的約束力,(2)食品安全事件對經營績效指標的影響,(3)企業倫理的規範對經營績效的指標的影響,以提供一些防止食品安全事件發生的對策。 本研究針對四家通路連鎖業、餐飲連鎖業為個案訪談分析對象,採用深度訪談法進行收集資料並利用敘述性統計方式分析資料。 研究結果顯示:(1)勞資倫理的落實對經營績效最有直接關聯性,(2)顧客倫理因為對客人服務及品質好,得到客戶的青睞對經營績效有回饋的關聯性,(3)就廠商倫理構面,如果企業的客戶是廠商,對客戶服務及品質好有誠信,對經營績效有回饋的關聯性,(4) 就社會倫理構面,企業對社會付出,有好的企業形象對經營績效有間接的影響。
Recently, since a huge number of bad food safety incidents have given rise to threats of diet of citizens, from two dimensions of business ethics and operation performance, this study will explore (1) the binding between regulations of business ethics and food safety incidents (2) food safety incidents’ impact on operation performance (3) regulations of business ethics’ influence on operation performance, and offer some suggestions for reference. This research gave interview for four companies of retailer chains and food service chains as case examples. This study conducted data analysis with descriptive statistics. Results of the study are as follows: (1) the implementation of labor- management ethics highly correlates with operation performance (2) customer ethics has feedback relations with operation performance (3) vendor relationships highly related with operation performance (4) good enterprise image has indirect impact on operation performance.
