大蒜五種水溶性含硫化合物對小白鼠脂合酵素之影響- 攝食高油脂飲食之動物研究

Effect of Five Cysteine-Containing Compounds on Three Lipogenic Enzymes in Balb/cA Mice Consuming a High Saturated Fat Diet

本論文主要探討以Balb/cA品系小白鼠攝取高飽和脂肪飲食時,大蒜水溶性含硫化合物N-acetyl cysteine(NAC),S-allyl cysteine(SAC),S-ethyl cysteine(SEC),S-methyl cysteine(SMC)與 S-propyl cysteine(SPC)對預防高脂血症及氧化壓力之影響。實驗期共四週,餵食含椰油高飽和脂肪飼料,飲水依組別給予水、cysteine及五種大蒜水溶性含硫化合物。小白鼠犧牲後,分析血漿葡萄糖(glucose)、胰島素(insulin)、三酸甘油酯(triglyceride, TG)、膽固醇(cholesterol)、尿酸(uric acid)濃度及三種脂合酵素glucose-6-phosphate dehydrogenase、malic enzyme、fatty acid synthase(FAS)之活性。結果顯示,給予18%高飽和脂肪飲食,顯著提高血漿及肝中三種脂合酵素活性、TG及膽固醇生合成(P<0.05)。飲水添加含硫化合物組,與水及cysteine兩組比較,前者顯著降低malic enzyme及FAS活性、血漿及肝之TG值(P<0.05);唯NAC、SAC、SMC顯著降低血漿與肝中膽固醇濃度(P<0.05)。飲水添加含硫化合物組,均顯著降低肝中Glutathione peroxidase(GPX)活性(P<0.05)。這些化合物顯著改善高飽和脂肪飲食相關的高脂血症、高尿酸及氧化壓力(P<0.05)。本研究顯示,此五種含硫化合物對預防及治療高脂血症可能具有多重保護效果。 關鍵字:含硫化合物、三酸甘油酯、脂合性酵素、高飽和脂肪
