中餐從業人員在職教育訓練需求之研究-以某協會衛生講習班為例

摘要


本研究除對中餐從業人員衛生講習在職教育訓練之制度發展作一探討外,並以個案研究的方式分析中餐從業人員對在職教育訓練需求之內容,並進一步探求不同背景變項之中餐從業人員對於在職教育訓練需求的差異情形,以研提中餐從業人員在職教育訓練之相關建議。 為達研究目的,本研究主要採問卷調查法。以某協會96年度衛生講習參訓學員為研究對象做全面性之普查,共發出812份問卷,回收有效問卷為679份,有效回收率為83.62%。所得資料採描述性統計、單一樣本t考驗、獨立樣本t考驗、單因子變異數分析等統計程序分析考驗後,獲得主要結論如下: 一、中餐從業人員衛生講習在職教育訓練之制度發展日趨開放與多元。 二、中餐從業人員在職教育訓練以"餐飲衛生安全"為首要之需求。 三、不同背景變項之中餐從業人員對於在職教育訓練需求確有其差異情形存在。

In addition to exploring the system development of food sanitation lectures, the purpose of this case research was to analysis the incumbency training needs of Chinese food staffs and investigated the differences of the participants’ demographic information in the training needs. To achieve the above purposes, questionnaire survey was adopted in this research. The questionnaire was to survey all members of food sanitation lectures in 2007 of an association. 812 questionnaires sent out, 679 questionnaires were effective ones and the effective recycled percentage was 83.62%. The data was analyzed by a number of statistical methods, such as descriptive statistics, one-sample t test, independent-sample t test, and one-way ANOVA. The results were as following: 1.The development of food sanitation lecture has become open and multiple. 2.The first training need for Chinese food staffs was the aspect of food-and-beverage hygiene and safety. 3.There were significant differences appeared in the incumbency training needs with different background items.
