台灣老餅鋪與傳統餅食研究

摘要


我們可發現,有關飲食文化議題的研究越來越多,地方傳統飲食更成為近來研究的熱門話題。不過相較於菜餚對於三餐的重要性,大多做為零食點心的「餅」卻在生活中少被正視,除了以地方伴手禮作為市場的號召,或是逢年過節才被人們所關注外,對於「餅」的文化、歷史與社會之間的關係常被人們所漠視;至於與「餅」相關的學術論文,也大多偏向糕餅業之行銷策略研究,真正從文化與工藝美學的角度探討台灣餅食的可謂少之又少。 其實,餅除了具有充飢滿足口腹之慾的實用功能外,還承載了濃厚的文化象徵意涵及感情的傳達,多成為人們表達禮節、善意與祝福的工具,在人們生活中扮演著不可或缺的角色。因此本論文期望以歷史學文獻資料的分析,了解餅食的歷史傳統、社會情境和文化脈絡;藉由人類學田野工作的採集,了解台灣餅鋪概況與各地特殊的餅食風俗;再透過工藝美學與象徵論,探討餅食上的紋飾寓意與包裝藝術,藉以從裡到外完整地了解傳統餅食的特色。目的在於喚起人們對傳統餅食的重視、培養品餅藝術;在淺嚐每一口餅食的美味之餘,都能體會到其中豐富的文化內涵與社會意義,更了解餅與人、餅與土地的關係;進而行銷台灣,立足國際。

We are detectable, the related diet culture subject's research are getting more and more, the place tradition diet becomes the hot topic of discussion which recently studies. However compares in the cooked food regarding the three meals a day importance, mostly does for between-meal snack dessert “the cake” is actually short in the life is faced up to, except takes the market by the place partner hand ritual the summons, outside perhaps is paid attention at holidays by the people, regarding “cake” between cultural, historical and society's relations are often ignored by the people; As for with “cake” related dissertation, also mostly the deviation cakes and pastries industry the marketing strategy research, truly discusses Taiwan pastries from cultural and the craft esthetics's angle it may be said few to be also few. Actually, the cake besides has appeases hunger satisfies desire of the food and drink utility function, but also the load bearing strong culture symbol meaning and the sentimental transmission, became the people to express the courtesy, the good intentions and the blessing tool much, in the people lived are playing the indispensable role. Therefore present paper expectation by history literature material analysis, understanding pastries historic tradition, social situation and cultural vein; Because of anthropology fieldwork's gathering, understands Taiwan bakery shop survey and the regional special pastries custom; Penetrates the craft esthetics again and the symbol theory, discusses on the pastries the decorative design in a utensil implication and packing art, so as to inside and out completely understands the traditional pastries the characteristic. The goal lies in arouses the people to the traditional pastries value, raise cake art; When eat each pastries delicacy, can realize the rich cultural connotation and the social meaning, understand the cake and the person, the cake and the land relations; Then sells Taiwan, the foothold international.
