日系餐飲品牌在地化之研究—以台灣九州鬆餅咖啡為例

台灣一向被譽為美食王國，餐飲業被視為極具發展潛力的市場，近年來隨著時代的進步以及消費型態的轉變，因應消費者的需求以及全球化的潮流，國內餐飲業也走向國際化的發展，而業者如何在引進海外餐飲品牌後，能掌握消費者需求及社會趨勢，成功發展自我特色深耕台灣，進而將品牌發揚光大，是其永續經營的首要目標。本論文旨於研究日本企業來台經營成功策略，採取個案研究法，以從日本引進的餐飲品牌—台灣九州鬆餅咖啡為例，使用質化個案研究設計進行研究，包括企業參訪門市實際觀察與企業內部訪談，和次級資料的蒐集作為主要討論依據及理論，並透過司徒達賢之策略矩陣分析法，試圖進一步釐清其所帶來的價值，對原來價值鏈的創新或互補，以及其所創造出新的競爭優勢。研究結果指出，海外餐飲品牌代理進入台灣市場，可運用策略矩陣分析法了解自身與競爭者的差異，並運用台灣在地優勢，結合餐飲品牌在海外的成功商業模式，了解海外餐飲品牌進入台灣市場後，如何因應在地飲食習慣及文化、市場定位差異化，制定出符合台灣市場的餐點口味及品牌定位，並熟悉如何與日本企業溝通及合作經營台灣市場，進而建立品牌形象、提升產品銷售，持續開發市場並擴大經營。期能藉由本個案研究，提供餐飲產業在經營管理的實務運作參考，以及策略分析之應用。

Taiwan is considered by many to be the heaven for gastronomes due to our creative and prolific ways to pleasure one’s palate. Catering industry is deemed to have a huge potential for further development in Taiwan. Due to effects of economic globalization on catering industry, many local caterers here in Taiwan get their dealership from foreign catering brands. It is the most important goal to meet the needs of customers after bringing in overseas catering brands. Based on Case Study Research, the study identifies some successful business strategies of Kyushu Pancake Café , a Japanese companying Taiwan. For gaining deeper strategic analysis of Kyushu Pancake Café, the study focuses on store visits, business interviews, the collection of secondary data and new competitive advantages of Kyushu Pancake Café by Strategic Matrix Analysis. Research shows the differences between Kyushu Pancake Café and other companies by using Case Study Research as a method in the study. Integration of local advantages and overseas successful business models, target market contractual-joint-venture are also competitive advantages of Kyushu Pancake Café.
