高職餐飲管理科學生廚藝相關課外閱讀行為與學習成就之研究

A Study of the Relationship between Extracurricular Reading Behavior of Culinary Art and Academic Achievement of the Students in the Department of Food & Beverage Management in Vocational High Schools

摘要


本研究旨在瞭解高職餐飲管理科學生個人背景變項與廚藝相關課外閱讀行為、學習成就間的差異。為達上述目的,採文獻探討、問卷調查等方法來蒐集資料,依文獻探討研究結果,發展自編之「高職餐飲管理科學生廚藝相關課外閱讀行為與學習成就問卷」為研究工具,以抽樣方式調查就讀於全國高職餐飲管理科二年級學生,共計962位,資料蒐集後,以獨立樣本t檢定、單因子變異數分析、卡方檢定、皮爾森積差相關行資料處理,其結果如下: 一、高職餐飲管理科學生廚藝相關課外閱讀頻率與時間屬中下程度 二、學生從事廚藝相關課外閱讀原因以無意間瀏覽居多 三、女生的廚藝相關課外閱讀行為優於男生 四、南部餐飲管理科學生較常從事廚藝相關課外閱讀行為 五、女生的學習成就優於男生 六、南部地區餐飲管理科學生技能面表現優於其他地區 七、私立學校技能表現較優,公立學校較鼓勵廚藝相關課外閱讀 八、廚藝相關課外閱讀行為與學習成就有相關 根據上述研究結果,提出相關建議如下: 一、對餐飲管理科學生的建議 (一)養成廚藝相關課外閱讀與終身學習的習慣 (二)保持正向的求知態度,充分利用各項學習資源 二、對教育單位的建議 (一)引導學生適性學習,設計廚藝相關主題課程 (二)勿偏重特定考試科目,提倡學科均衡發展 (三)公、私立學校相互借鏡,提高餐飲管理科學生的競爭力

The main purpose of this research was to understand the relation between the extracurricular reading behavior of culinary art and the academic achievement of the students in the department of Food & Beverage Management in Vocational High Schools. Questionnaire survey was used as the basic construction for this research. The second year students from the Department of Food & Beverage Management in Vocational High Schools were selected as the study objects of this research. There were a total of 962 students as effective samples. Researcher set up “Survey Questionnaire for the students in the Department of Food & Beverage Management in Vocational High Schools about the topic of the Extracurricular Reading Behavior of Culinary Art and the Academic Achievement” by oneself and utilized it as the tool for this research. The survey questionnaire was done by referring to the previously done questionnaires as regard the domestic extracurricular reading. Statistic analysis software package SPSS 12.0 version was adopted for the information analysis. The statistical methods included descriptive statistics, t-test, one-way ANOVA, chi-square test, Pearson product-moment correlation and so on. Base on a probe into literature and actual information obtained, analytical results of this research are concluded as follows: (1) The level of Extracurricular Reading Behavior of Culinary Art of the students in the Department of Food & Beverage Management in Vocational High School is under average. (2) The students free to browse the reading of extracurricular reader about the Culinary Art (3) In the scale of “gender”towards extracurricular reading behavior of culinary art, the female students are better than the male students. (4) The students in southern Taiwan engage in outside reading are more than the students in the other areas of Taiwan. (5) In the scale of “gender”towards the academic achievement, female is better than the male. (6) On the performance of profession skills, the students in southern Taiwan are better than the students in the others of Taiwan. (7) In the scale of “attributes of the schools”towards the academic achievement, the performance on the skills of the private schools is better than the public schools; the public schools encourage students more on outside reading than the private schools. (8) The analysis shows the positive corelation exists significantly between “the Extracurricular Reading Behavior of Culinary Art” and “the Academic Achievement” According to the results mentioned above, the suggestions for the students in the department of Food & Beverage Management and the education departments concerned are as follows: 1.The suggestions for the students in the department of Food & Beverage: (1) Build up the habit of outside reading about the Culinary Art and lifetime learning. (2) Maintain the positive attitude about learning, and make full use of the learning resources. 2. The suggestions for the education departments concerned: (1) Guide the students towards the adaptability learning and design the related curriculums about the Culinary Art. (2) Promote the balance on the development of the courses. (3) Public and private schools learn the lessons from each other to improve the competiveness of the students.
