高職餐飲科教師產業經驗與教學知能關係之研究

The Study on the Relationship Between Industry Experience and Pedagogical Knowledge of the Teachers in Food and Beverage Department of Vocational High Schools

摘要


本研究旨在了解高職餐飲科教師產業經驗現況,並調查同儕、教師本身及學生等不同觀點來分析產業經驗與教學知能相互之間的關係。研究方法採用質量並行,利用深度訪談瞭解資深教師或科主任對有產業經驗教師的教學知能看法,並萃取出高職餐飲科產業經驗的元素。對於教學知能則利用問卷來調查,對高職餐飲科教師發放111份,有效回收100份,回收率90%,並對有產業經驗教師的班級學生發放問卷500份,有效回收441份,回收率88%。以描述統計、相依樣本T檢定、單因子變異數分析、皮爾森積差相關等統計方法來考驗資深教師、教師本身及學生之間對教學知能的看法差異。 經由上述研究結果描述如後,高職餐飲科產業經驗的定義係指曾在業界工作經驗、餐飲相關證照取得、餐飲相關技藝競賽經驗及專業進修等。不同學校別、不同師資需求對各個學校在產業經驗選項也有比重的落差。資深教師認為教師過去產業經驗在教學知能上的幫助有在班級經營輔導中包含與學生互動、班級學習常規的建立及職涯輔導規畫等教學知能。在餐飲專門知能中包含專業技術與知識、職場文化的媒介、輔導考照與比賽及實習教室管理等教學知能。在課程設計與教學中包含課程安排、教材教法及活動參與等教學知能。然而不同屬性的資深教師對教學知能各構面有不同的看法。數據分析結果資深教師、教師本身及學生對有產業經驗教師的教學知能看法有差異。細分教師與學生對教學知能表現看法有部分顯著差異。較特別的是產業經驗程度高低對教學知能看法無顯著差異,只有教師本身參加過餐飲相關競賽與班級經營輔導知能上有顯著相關。 就研究結果建議後續研究可針對不同項目搭配不同學校背景做深入探討。就學校而言應幫助缺乏教育背景的業師應建立一套輔導機制,發揮雙倍效果。

The aim of the study was to understand the relationship between industrial experience and pedagogical knowledge of food & beverage teachers by investigating the view of peers, teachers and students. Qualitative method and quantitative method were both adopted in this research. Interview the senior teachers or chairpersons of the department deeply to extract the industrial experience factors. In terms of pedagogical knowledge, questionnaire was adopted. The questionnaire was applied to totally 111 food and beverage teachers and 500 students. 100 valid teachers’ questionnaires and 441 valid students’ questionnaires returned. That is, the valid return rate of teachers questionnaire was 90% and the valid return rate of students questionnaire was 88%. Next, the data collected were subjected to statistic analyses such as Descriptive Statistics, t-Test, One Way ANOVA, Pearson Product-Moment Correlation Analysis etc. The main findings were as follows: 1. Every school had different need of teacher and emphasized the different factors of industrial experience.2. Senior teachers believed that industrial experience improved the classroom management, such as teacher- student interact, classroom rule establishment, future career arrangement and etc.3. Different domains of senior teachers had different views of pedagogical knowledge.4. There are differences between senior teachers, teachers, and students in pedagogical knowledge.
