本文主要目的在於探討餐旅產業的工作場域特性與同志人格特質的相互關係。文獻回顧,首先探討餐旅場域運作邏輯與特性有三:(一)殷勤款待的服務視為專業化(二)殷勤款待服務的專業形象存性別刻板印象(三)有兩性化特質的人才需求。接著透過同志研究發現同志族群於許多人格特質上經常有不同於異性戀的特殊比例。本文透過深度訪談餐旅業八位同志員工,並與文獻回顧進行對照與分析。企圖了解同志員工如何想像場域特性與自身特質呼應,場域又是基於哪些運作特性使然將同志納為人才善用,同志受訪者又是如何理解場域並實踐符合場域的展演。原本因社會狹隘的兩性價值觀而遭邊緣化的同志族群,卻因餐旅場域運作邏輯所需,意外地創造了同性戀者經常比他人具備更多或更強烈的特質,難得地可以比起其他場域,更可能自在地展演屬於自我的日常表演,一個經常兼具兩性化特質的同志族群“自然”地進入餐旅場域並且活躍其中。因此,從本研究觀察與整理不僅說明了過去餐旅業以服務內涵為基礎所建製的人才需求與結構,卻也因此推演預測出未來餐旅業人才的需求和新的調整與想像空間。
The purpose of this study is an attempt to analysis the relationship implication between hospitality industry and its homosexual employees by using Bourdieu's field concept. It is argued that the characteristics of hospitality employees are somehow applicable for characteristics of homosexual groups. The research had conducted several in-depth interviews with either gay or lesbian who are currently working in the hospitality industries in Taiwan. The results found that the characteristics of this particular group of employees have performed themselves well fitted in the environment of hospitality requirements. It also indicates that with its sensitive nature it tends to be more understandable and considerate for customers needs. It concludes that the future of manpower structure for hospitality industry should be more flexible and feasible for the homosexual employees.
