高中職餐旅群國際教育實施成效之探究

摘要


本研究旨在瞭解高中職餐旅群國際教育之實施成效,以文獻探討、量化問卷調查為主與質性訪談為輔等方法來瞭解實施成效。根據文獻探討,發展自編之「高中職餐旅群國際教育實施成效調查問卷」與訪談題綱為研究工具,以抽樣方式調查餐旅群高中職曾經參與過國際交流活動之學生,共計372位;訪談部分為曾參與國際交流活動之專任教師共3位,資料收集後以獨立樣本t檢定、單因子變異數分析進行資料處理。 整體而言,我國高中職餐旅群國際教育實施成效尚稱良好,研究結果發現如下:一、課程發展與教學層面為(一)公立學校對課程發展與教學感受高於私立學校,(二)教師國際知識深淺會影響國際教育融入課程的品質,(三)自編學習教材與活動融入國際教育課程使用率低,(四)低年級學生對課程發展與教學感受高於高年級學生;二、國際交流活動層面為(一)學生語言能力影響國際交流活動成效,(二)家庭背景影響學生參與國際交流活動意願(三)國際交流活動結束沒有徹底落實回饋及反思;三、餐旅專業成長層面為(一)有無語言證照影響餐旅專業成長成效,(二)國際教育的落實提升學生餐旅專業成長;四、學校國際化層面為(一)私立學校對學校際化滿意度高於公立學校,(二)學校國際化成效及滿意度為四個變項中最低。 根據上述研究結果,提出相關建議如下:一、提升餐旅群學生外語能力畢業門檻,二、增加專業教師使用自編學習教材與活動之數量,三、徹底落實國際交流活動之反思,四、提升弱勢家庭參與國際交流的機會,五、落實完善的外文宣傳、雙語教學環境,六、加強餐旅專業教師國際教育專業成長之研習。

This research explored the outcomes of the implantation of international education of hospitality-major category in senior and vocational high schools. To achieve the purpose, the use of literature review, questionnaire survey and qualitative interviews and other methods to collect information. According to literature results, to develop of self in " The Questionnaire Of the Implantation of International Education of Hospitality-major Category in Senior and Vocational High Schools "and interview subject headings as the research tools. The overall, the outcomes of the implantation of international education of hospitality-major category in senior and vocational high schools is great, the research findings are as follows: First, the aspect of curriculum development and teaching (i) State schools on curriculum development and teaching experience than private schools. (ii) The depth of teachers’ international knowledge of international education into the curriculum quality. (iii) It’s less utilization to prepare by their own learning materials and activities of the international education program. (iv) Lower grade students on curriculum development and teaching experience above the higher-grade students; Second, the aspect of international exchange activities (i) Students ' language ability to influence the effectiveness of the international exchange activities. (ii) Family background affect students' willingness to participate in international exchange activities. (iii) It was not completely implement feedback and reflection from the international exchange activities; third, the aspect of hospitality professional growth (i) Whether the language certificates were affected the outcome of hospitality professional growth. (ii) The implementation of international education to enhance students' hospitality professional growth; Fourth, the aspect of the internationalization of schools (i) Private schools’ internationalization of schools satisfactory than state schools. (ii) The internationalization of schools effectiveness and satisfaction of the lowest in the four variables. According to the findings, suggestions are as follows: First, to enhance the hospitality group of students’ language graduation threshold. Second, the professional teachers increase to use their own learning materials and activities. Third, to fully carry out reflection after international exchange activities. Fourth, improve disadvantaged families the opportunity to participate in international exchanges. Fifth, the implementation of foreign propaganda, bilingual teaching environment. Sixth, strengthen the hospitality professional teacher professional development.
