番薯於臺灣飲食文化脈絡中的演變

摘要


社會變遷快速而隨著現代化與全球化的影響,「飲食」已逐步成為社會文化力量運作的關注焦點。「番薯」在日治時期過後的農業社會,因為政策發展使得稻米主要作為外銷,缺 乏白米的臺灣人因此將番薯作為主食之一,此後便被視作窮人的食物甚至為養猪的飼料;但在科技發達的今日,卻已漸晉升為帶有懷舊情感的養生膳食,本研究擬透過各時期政策的發展、媒體形塑以及有關番薯的懷舊文本,來 探討番薯對於臺灣飲食脈絡中的演變。藉由觀察食物中介-蕃薯所展現的不同面貌,從集體記憶的場域及食物的意義,深入了解臺灣社會變遷中飲食觀感之轉變,及其在現代消費文化脈絡中崛起與轉型為例,闡述番薯在時代中所扮演的角色及重構過程,爬梳相關番薯文獻,在臺灣人飲食文化中其消費形式的發展脈絡,瞭解番薯對於臺灣人的精神價值、有機食材的養生之道,以及國人對番薯的珍貴懷舊記憶。

Due to the impact of modernization and globalization, the rapid socialchange has made the food culture a focus of social culture transformation.During the period of Japanese occupation, sweet potatoes became the staplefood of Taiwanese people because the majority of rice yields were forced to export to Japan, and since then, sweet potato was regarded as the food for the poor and was even utilized as pig feed. Although once belittled by people, sweet potato nowadays becomes a fashionable and nostalgic health food in the modern taiwanese society. This study probes into the evolving of people’s dietary perceptions and eating habit change of the iconic food, the sweet potato, to reflect the social transitions in Taiwan over recent centuries. Also,we can see how the government’s political policies and medium propaganda influence the role that sweet potato plays in our daily lives.
