台南的飲食書寫研究－－以魚夫、王浩一、Darkbringer為觀察核心

摘要

台南素有美食之都稱譽，小吃幾可作為城市品牌以行銷觀光，然而在城市的飲食書寫面向上，卻呈現相對缺乏的現象。從1995至2015年這二十年之間，不計美食指南式的導覽書籍，關於台南飲食書寫主題的出版品只有十本，而且集中於2011年縣市合併之後。
近年台南爆發觀光熱潮，讓城市書寫成了顯學，連帶使飲食書寫的出版也豐富起來。其中王浩一的《小吃研究所》上下冊、魚夫的《移民台南》及Darkbringer的《24hrs吃在台南》不僅著墨於小吃或店家本身的介紹，更強調台南飲食體系形成的文史脈絡，以及飲食現象所引發的思考。
本文試圖由三位作者對飲食的書寫著手，透過文本解析呈現出台南在地飲食書寫的樣貌，其次分別從空間與時間兩個角度切入，討論文本所描繪出的台南飲食地景，以及台南小吃獨特的時間觀。

Tainan is known as the culinary capital. Snack food are almost as an urban brand for tourism. However, in the city's diet writing, but showing the relative lack of phenomenon. From 1995 to 2015, written on the theme of Tainan diet only ten publications not including the Food Guide between the two decades. And concentrated in 2011 after the merger counties. In recent years, the outbreak of Tainan tourist boom, so that writing about the city becomes popular.Therefore, Diet writing becomes more. Wang Hao Yi "snack Institute" , Yufu "immigrated to Tainan" and Darkbringer "24hrs eat in Tainan" not only introduce snack food or shops, but also think HISTORY context of Tainan diet system and Phenomenon.
This thesis attempts to discuss the face of Tainan snack food writing through text analysis by the three authors. Next, into the space and time to explore from two angles. Discussion the landscape of Tainan snacks, and unique concept of time.
