臺灣鰻魚養殖產業發展已久,近年來受中國鰻業崛起,市場供需失調加上日本嚴格的食品安全規定下,獲利狀況受到壓縮。但仍有業者長期以來在獲利方面表現亮眼,以穩定價格與產量成功打入日本消費市場。因此本研究的研究目的先了解鰻魚養殖產業概況,再針對臺灣成鰻養殖場分析其創造附價加值的活動,並探討其經營管理之關鍵成功因素,以為經營鰻魚養殖之參考。 本研究以Porter企業價值鏈為本文理論基礎,蒐集相關文獻與專家深入訪談資料,建構出臺灣鰻魚養殖場價值鏈,接著利用各價值活動為評估準則,以AHP層級分析法萃取出關鍵成功因素。 本研究分析結果,得出臺灣鰻魚養殖之關鍵成功因素為:「控制給餌量」、「分養」、「財務調度規劃」和「專業機構檢驗許可」。擬定之策略為:1. 以市場要求為原則,掌握最佳生產與符合規格之生產流程;2. 建立年度財務資金規劃制度並善用生產合作社之協助;3. 重視食品安全維護檢驗制度,禁用未經審核之產品。
Eel Aquaculture in Taiwan has developed for a long time. In recent years, the profits have reduced because of the fast development of eel aquaculture in China to supply more than demand and the stricter requirements of food security in Japan. However, there are still some companies successfully exporting eel products into the Japan’s market with stable price and good profits. Therefore, the goal of this research is to investigate the situations of the eel aquaculture in Taiwan, to identify the value-added activities of the eel aquaculture, and to extract the key success factors of eel aquaculture. Based on the theory of Porter’s value chain of corporation, the related literature, and the expert interviews, the model of value chain of eel aquaculture farm in Taiwan is established and the activities are investigated. Based on the value-added activities, a model of Analytic Hierarchy Process (AHP) is derived to extract the key success factors. As the results, the key success factors of eel aquaculture farm in Taiwan are: “feeding dose control”, “sorting”, “financial plan”, and “permission of specialized organization examination”. The strategies of eel aquaculture are suggested as: 1. to control the best production process to fill the market requirements; 2. to set up the annual finical funds planning system and to utilize the assistance from production cooperatives; 3. to ensure the food safety by following the maintain examination system and using the permitted products.
