This study investigates the effect of stimulation sterilization on Escherichia coli with a variety of variables statistical analysis. The stimulation factors include electric field, time, frequency and waveform, four factors and three levels, therefore orthogonal arrays- L934 is used in the experimental design. The results show, the electric field intensity factor for the growth of Escherichia coli is the greatest impact. This study discusses the design of the optimization sterilization parameters via electric stimulation on fresh apple juice as the target of food sterilization. The experimental results show that the microorganism in fresh apple juice can be reduced 4.02 log cycles via electric field at 37.21kV/cm, electric time for 25 min, frequency at 2.2 kHz, and triangle wave.
