在使用者健康權益的考量下,國內文獻資料建議:「改善廚房排油煙機的裝置高度」或「使用桌面型排油煙機」可以降低烹煮者的廚房油煙暴露風險,然而,裁至目前為止,國內外尚無文獻資料提及:如何依循上述建議來改變台灣地區傳統排油煙機的抽氣模式。因此,本研究在『改變廚房油煙排放途徑,以降低使用者呼吸帶之暴露風險』的考量下,嘗試側吸式抽油煙機之設計實作與排煙效能評估,冀望藉由實.驗室全尺度(full-Scale)廚房實驗屋的實驗,來瞭解不同測吸方式與設置位置對於廚房整體空氣品質、油煙捕集效率與排油煙機耗能等的影響。研究發現,本案擬用之3種側吸型式(單條式、雙條式及柵欄式),只要裝置在最靠近鍋綠處,即可將烹煮時的氣態污染物有效地排除。
In response to concerns about the health of housewives who are regularly exposed to excessive quantities of air pollutants when cooking, a number of domestic documents have recommended solutions such as: ”decreasing the installation height of the range hoods” or ”using desk-top ventilators”. However, few if any studies have addressed the issue of how to make improvements to the traditional Taiwanese style of range hood. This study investigated the design and experimental assessment of side-sucking exhausts in a full-scale model kitchen are carried out to understand how different exhaust configurations could affect the overall exhaust performance. It was found that single-slot, twin-slot, fence slot exhausts closer to the pot rims performed well in air exhalation, and ensured the indoor air quality in the kitchen was maintained a acceptable level.
