甘藍簡易人工大氣貯藏試驗

The Controlled and Modified Atmosphere Storage of Cabbage

摘要


利用PVC(poly vinyl chlolide)塑膠膜,以高週波機密封製成之簡易人工大氣貯藏室,配以乙烯及二氧化碳過濾吸取裝置,因氣密性不佳,氧氣在13~18%之間,二氧化碳3~6%之間,無法達到理想之大氣組成,但甘藍經三個月之貯藏其可售率可達68%。 以大型PE塑膠袋,內置5-6只甘藍後將開口密封,以改變袋內大氣組成之方式(modified atmosphere)貯藏三個月,氧氣濃度及二氧化碳濃度各維持於2%及10%左右,貯藏後甘藍之可售率計田間密封加高錳酸鉀乙烯吸收劑處理者爲63.8%,預冷後密封加上述吸收劑者爲85.3%,不加吸收劑不密封者爲47.9%。 品質劣變以苞葉黃化及莖部發芽爲主,黑點及基部纖維化除對照發生外,有吸收劑者皆未發現。

Cabbages (Brassica oleracer, cultivar 'Chu-chiuo') were stored in a sealed polyvinylchloride (PVC) tent (0.1m/m in thickness, 8m^3 in capacity) and polyethylene (PE) bags (0.03m/m in thickness, 0.9×1.5M^2 in size) for 3 months. The ethylene and carbon dioxide in the tent were reduced by potassium permangnate and fresh lime. However, the control of O2 concentration inside the tent was not quite successful because of the leakage of the tent. The concentrations of O2 and CO2 were 13-18% and 3-6% respectively. Ethylene was not detectable during storage. Cabbages were good in eating quality and fairly well in freshness with a salability of 68% after storage. The concentrations of O2 and CO2 were 0.5-5% and 9-13% respectively in sealed PE bags with cabbage. Cabbages precooled overnight plus ethylene absorbent treatment showed the highest keeping quality with a salability of 85% followed by 64% in the treatment without absorbent and 48% in the treatment without precooling and absorbent. Major deteriorations of quality were leaf yellowing and stem sprouting. Ethylene absorbent was found effective in reducing the black leaf speck and stem fiberlization during storage.
