日治時期臺中的空間治理與飲食業區位發展

Spatial Governance and the Development of Catering Location in Taichung under Japanese rule

摘要


日本在甲午戰後取得殖民地──臺灣,基於長久的統治需求,藉由調查、規劃逐步掌握地方的控制。另一方面,殖民背景下也帶來了許多官僚及民間移民,這些移民者對於飲食的需求進而促成飲食業的快速發展。本文將探討的重點為:新興飲食店家的經營,是否受到官方對地方的控制影響?在研究範圍的選定上,臺中作為清末三府之一、到日治時期又為第一個完全由新政府規劃的城市,可以藉此觀察市街逐步納入日本規劃的過程。就成果而言,本文發現飲食業的經營區位受到官方對地方的掌握所影響,在歷時的比較上,順應著城市的擴張發展;在區位上,則受公共設施及遊廓、市場的選址而群聚。

After Sino-Japanese War, Japan colonized Taiwan and Governor-General of Taiwan must investigated everything on this island so as to controlled it. On the other hands, the demand of diet of the Immigration from Japan, including officials, promoted the development of catering in Taiwan. This study aims at: Did the controlling over the local authority from Governor-General of Taiwan influenced the managing of new style eateries or restaurants? Taichung was affiliated to the Taiwanfu (after 1887 A.D.) in Qing Dynasty, then it was chosen to be the first city in Taiwan that totally planned by Governor-General of Taiwan. As the site of this research, we can figure out the process of the district development under Governor-General of Taiwan ruled. In summary, this study finds out the catering management location in Taichung were influenced by the controlling over the local authority from Governor-General of Taiwan. The catering management locations in Taichung were growing when the city expand, and the aggregating of the catering management locations were determined by the public facilities, Yukaku and markets.
