跨國飲食文化與移工健康問題探討:以甲狀腺亢進為例

摘要


目前國內有超過六十萬名移民工作者(移工),隨著環境變動和飲食文化改變,會對於移工健康造成影響。甲狀腺在內分泌系統扮演重要角色,其中甲狀腺賀爾蒙和碘攝取最為相關。碘主要的來源為食物攝取,當攝取不足會導致碘缺乏疾病,如胎兒流產、死產、先天性畸形、智能低下、甲狀腺功能低下、甲狀腺腫和碘造成的甲狀腺亢進等。當外國工作者到台灣後,飲食文化差異可能影響其碘的攝取量和甲狀腺功能表現。本篇研究透過碘缺乏疾病介紹、碘缺乏概況、補充建議到碘造成甲狀腺亢進與跨國碘營養狀態的比較,讓讀者有進一步的認識與了解。

Currently, we have more than six hundred thousand immigrants in Taiwan. With the variation of environment and cross-cultural diet, it has influence on immigrant workers’ health. Thyroid gland plays an important role in endocrine system, and thyroid hormone mainly related to iodine. Daily food is the main source of iodine. Iodine deficiency disorders (IDD), including abortions, stillbirths, congenital anomalies, mental retardation, hypothyroidism, goiter and iodine-induced hyperthyroidism are caused by inadequate intake of iodine. After immigrants come to Taiwan, cross-cultural diet influence on iodine nutrition and thyroid function. This topic focuses on thyroid disorders associated with iodine nutrition, hoping this article let everyone learn more knowledge of the thyroid deficiency disorders, iodine nutrition, recommended daily allowances and iodine-induced hyperthyroidism.
