再加工處理及儲藏條件對降低金針乾製品二氧化硫殘留量的影響

Reducing the Sulfur Dioxide Residue of Dried Day-Lily Products by Various Reprocesses and Storage Conditions

摘要


市售金針乾製品可分為色澤呈金黃或淡黃色的台灣本土產品和較暗褐色的大陸產品兩種,其二氧化硫殘留量分別介於9000至20000ppm及2000至12000ppm之間。故本研究之目的是藉著不同方式的再加工處理以降低金針乾製品二氧化硫的殘留量,並研究儲藏方式對金針乾製品二氧化硫殘留量的影響。結果顯示原先高二氧化硫殘留量的金針乾製品以漂水30分鐘後再進行熱風乾燥1小時、日曬24小時或利用微波加熱1分鐘的三種再加工處理方式可獲得較高的二氧化硫去除率,且金針的色澤仍屬良好。在儲藏方式方面,以PE夾鍊袋儲藏二個月後,金針乾製品中二氧化硫去除率依大小次序為:袋口打開置於光線下者>袋口密封置於光線下者>袋口密封置於紙箱中不照光者>袋口密封置於冰箱冷藏室者,而置於冰箱冷凍庫者其二氧化硫殘留量幾乎沒改變。

There were two kinds of dried day-lily products in the market, one with golden yellow color was domestic product and another with dark brown color was from Mainland China. Both of the products contained sulfur dioxide residues of the range from 2000 to 20000ppm. The objectives of this study were to decrease sulfur dioxide contents of dried day-lily products by various reprocesses, and to evaluate the effects of storage conditions on sulfur dioxide contents of the products. The results showed that the sulfur dioxide contents of the dried day-lily products can be effectively reduced by leaching 30min and then followed by 1 hr hot air drying, 24hr sun drying or 1 min microwave heating, but the products still remained a beautiful golden yellow color after the reprocessing. Comparing the effects of storage conditions on the sulfur dioxide removal rates in dried day-lily products, the removing rate was in the following order: the PE bag without sealing under light > the PE sealed bag under light > sealed bag in the box storage without light > sealed bag under the refrigerator storage and then freezing storage, in order.
