食品潛在重金屬風險之分析與管制研擬

摘要


食品藥物管理署(下稱食藥署)為維護消費者飲食衛生及安全,於邊境依產品風險等級實施抽樣檢測,並依產品查驗不合格紀錄,逐級提高產品抽驗機率至逐批查驗,隨時監控國際食品安全警訊,必要時適時調整邊境查驗措施,以落實輸入食品查驗把關,確保國人健康安全。本研究運用食品雲大數據等相關資訊,結合統計科學方法進行分析,提供調整邊境查驗措施之參考,以提升整體邊境源頭管理之成效。針對檢驗項目「重金屬」潛在風險產品預測及管制研析,探索歷年產品不合格情形顯著相關之風險。研究結果顯示:1.建議將「鉛」及「鎘」納入「薑黃粉」未來邊境關注檢驗項目。2.建議加強「百合」、「扇貝」及「花椒」之邊境管控。

To ensure food hygiene and food safety of consumers, TFDA implemented sampling measures at the border according to product risk levels. The sampling rates of failure products would gradually increase, and may reach to batch by batch inspection based on the historical data from food cloud. This study provided suggestions for adjusting border inspection utilizing big data analysis assisted with statistical and scientific risk factors. The results were able to predict future risks by looking into the historical pattern of past metal inspection records. The study concluded that: 1. Lead and cadmium were suggested to add in the inspection item list of turmeric powder. 2. Three products, "lily", "scallop" and "pepper", were suggested to increase the control level.
