台灣常見水果之昇糖指數值測定及其影響因子之分析

摘要


飲食中的碳水化合物在血糖調控上扮演一個很重要的角色,水果一直是國人喜愛且接受度極高的食物種類,且水果是富含相當量之碳水化合物的食物。故本研究目的為,分析水果昇糖指數(Glycemic index, GI)及其影響相關之因子。招募年齡介於19-25歲的健康受試者,給予18種台灣常見水果進行測試。每次實驗在抽取空腹血液後,給予等量碳水化合物(25公克)之葡萄糖液或水果,並於15分鐘內吃完,接著抽取30,45,60,90,120分鐘的血液,並利用其計算GI值。同時分析水果中醣含量、糖度(brix)、膳食纖維等及探討其與GI之相關性為何。結果發現,18種水果的GI值介於14.9-106.1;糖度介於4.8-21.0;膳食纖維含量介於1.6-7.8(克/25公克總碳水化合物)。在影響因子相關性分析之結果顯示,GI值與總醣量、糖度具有顯著正相關(p<0.05),而與膳食纖維含量具有顯著負相關(p<0.05)。

The carbohydrates in the diet play an important role in the regulation of blood sugar. Fruits have always been a favorite and highly accepted type of food for the people, and fruits are foods rich in carbohydrates in a considerable amount. Therefore, the purpose of this study is to analyze the glycemic index (GI) of fruits and related factors. Recruit healthy subjects aged 19-25 years old, and give them 18 common fruits in Taiwan for testing. In each experiment, after taking fasting blood, give the same amount of carbohydrate (25g) glucose solution or fruit, and eat it within 15 minutes, then draw 30, 45, 60, 90, 120 minutes of blood, and use it to calculate GI value. At the same time, it analyzes the fruit sugar content, brix (brix), dietary fiber and other influencing factors and explores its correlation with GI. The results showed that the GI value of the fruit is between 14.9-106.1; the sugar content is between 4.8-21.0; the dietary fiber content is between 1.6-7.8 (g / 25 grams of total carbohydrates). The correlation analysis results show that GI value has a significant positive correlation with total sugar content and sugar content (p<0.05), and a significant negative correlation with dietary fiber content (p<0.05).
