咖啡店從業人員職能之探討

摘要


服務業強調第一線的從業人員是影響企業成敗的重要關鍵因素之一。本研究旨在探討咖啡店從業人員應具備的專業技能、知識、態度及人格特質,調查該產業目前迫切需求的重點人才。本研究經由文獻分析法、直接觀察法、參與式觀察法,歸納出咖啡店從業人員應具備的職能項目,並提出具體之建議。從業人員專業知識不足,缺乏相應的理論知識、職業能力低、培訓不夠規範,將無法滿足市場的需求,希望藉由個人經驗及本研究結果,以作為坊間咖啡店經營之參考。

Emphasis on the first line of service industry employees is the key to business success impact factor. This study aimed to explore the coffee shop employees should have the professional skills, knowledge, attitudes and personality traits, there is an urgent need to investigate the industry's key personnel. The study by document analysis, direct observation, participant observation, induction a coffee shop employees should have the functions of the project, and make specific the recommendations. Employees of expertise, lack of appropriate theoretical knowledge, professional capacity, and training not up to standard, will not be able to meet the needs of the market, hoping that through personal experience and the results of this study, as the printing of coffee shop business reference.
