飲食頻率問卷的設計考量與效度評估

Design Consideration and Validity Evaluation of Food-Frequency Questionnaires

摘要


飲食評估工具可以用來評估不同族群的營養素攝取量及飲食習慣,目前已有許多流行病學研究利用有效度的飲食頻率問卷(food frequency questionnaire, FFQ)評估受試者之飲食攝取狀況,但FFQ會因受試者之種族、社經狀況、文化背景及研究主題而影響問卷之設計,因此本篇綜論目的為敘述FFQ的問卷設計考量與應用及介紹多元的問卷效度評估方法。文中統整西方國家及臺灣所發表的文獻,論述FFQ發展概念、問卷設計之原則,包含:食物項目設計、題數多寡、份量設計概念、問卷作答方式及FFQ以不同效度驗證之運用,如:以3天或多天24小時飲食回憶法及生物標誌作為驗證之參考方法,於此本篇綜論可作為新發展或修訂FFQ相關研究或臨床應用之參考。

Dietary assessment tools can be used to assess intake of nutrients and eating habits. Validated food frequency questionnaires (FFQ) have been used in many epidemiological studies to assess individual dietary intake in different populations. FFQ design can be varied depending on differences in ethnicity, socioeconomic status, cultural background, and research topic. The purpose of this review is to characterize and discuss FFQ questionnaire design considerations, applications, and methods of evaluating questionnaire validity. Reviewing related literature published in the West and Taiwan, we examine the concept of FFQ development and the principles of questionnaire design, which include designing food items, determining number of food items, and designing food portion size estimations as well as methods of administering FFQs and verifying FFQs, including such reference methods as 3-day or multi-day 24-hour dietary recalls and biomarkers. This report can serve as a reference for the development or revision of FFQs for dietary survey research or clinical uses.
