Discussion on the Quality Control Effects of Healthy Blended Formula Frozen Convenience Packs

摘要

為了提供居家病人管餵飲食便利性並提升營養醫療品質，研發以線性低密度聚乙烯（linear low-density polyethylene, LLDPE）包材製作天然攪打灌食配方冷凍便利包。需要確保便利包的營養與衛生安全，故進行冷凍前後的細菌數、營養量、黏度（viscosity）以及塑化劑檢測。結果顯示，冷凍儲存28天之總生菌數、大腸桿菌群含量符合冷凍食品相關標準。冷凍後復熱的便利包產品並未檢出塑化劑。維生素A效力含量下降22.5%。過去的研究顯示，3份天然攪打配方作為1日灌食的部分餐次，本案檢測之豬肉南瓜配方冷凍便利包（750 kcal）含有維生素A效力678 μg RE，已可達到國人膳食營養素參考攝取量建議量。其他營養素，如維生素B1、B2、B12、B6、葉酸等，冷凍復熱後則無明顯變化。檢測適合灌食溫度40 ± 2°C的黏度值介於107.0～483.1 cps，可順利灌食，不會造成管徑阻塞。108年天然攪打灌食配方外帶服務量（杯裝＋便利包）較104年成長1.93倍。綜上，就營養素、安全性、便利性等，本項高價值服務值得推廣，作為居家腸道營養灌食配方之選擇。

To provide the convenience of tube feeding for patients at home and to improve the quality of nutritional care, we used a packaging material made from linear low-density polyethylene (LLDPE) to prepare healthy blended formula frozen convenience packs. To ensure the nutrition value and safety of the pack, we tested for bacteria and checked the nutrient amount, viscosity, and plasticizer levels before and after freezing. The results demonstrated that the total number of bacteria and the Escherichia coli content of packs that had been in frozen storage for 28 days were in compliance with the frozen food standards. No plasticizer was detected in the reheated convenience pack. A study reported that 3 daily meals of healthy blended formula replaced commercial products could provide enough nutrients. Additionally, vitamin A efficacy contents were decreased by 22.5% respectively. The pork and pumpkin formula frozen convenience packs (750 kcal) were revealed to contain 678 μg RE of vitamin A, which is in accordance with the recommended quantity of dietary reference intakes. The content of other nutrients, including vitamin B1, B2, B12, B6, and folic acid, did not change significantly. The viscosity value at the feeding temperature of 40 ± 2°C was between 107.0 and 483.1 cps, which enables smooth feeding without any blockage. The sale of healthy blended formula (cups and frozen convenience packs) has increased by 1.93 times from year of 2015 to 2019. In summary, healthy blended formula frozen convenience packs present a high-value service that warrants promotion as a safe and nutritious option for enteral feeding formula at home.
