《台北人》食藝風尚伴隨休憩意象之時空析理

摘要

《台北人》是白先勇14篇短篇小說集，記述早年隨政府播遷來台人士的生活狀況，每篇小說內容不同，卻串連當時整個社會的氛圍，小說中有食衣住行、生活打拼、休閒娛樂等等。本文則摘由《台北人》文本中所記述的食藝意象及飲食休閒加以探討，先以文學視角剖析小說，再從人文觀點加以析理闡釋，並藉《台北人》膳食面向的書寫所引介與隱喻的意涵，研析《台北人》的飲食風尚，解構彼時飲食文化所伴隨時空休憩的面面觀，以及生活品味所隱含的食藝理哲。經本研究分析，白先勇係透過生活休閒襯托出餐飲美食所伴由的外在表現，而映射《台北人》思鄉懷舊的內在心態，並由品酒飲茶所伴同的具象表現，而反應出肢體語言的抽象意涵，進而擘劃及詮釋《台北人》的人生宿命。

＂Taipei People＂ written by Hsien-Yung Pai is a well-known novel in which it collected 14 essays and delineated the daily life of immigrants coming from Mainland China to Taipei City in 1940s. During this transition period, some of them could adapt themselves to a new environment, but some couldn't. Also, some of them circled in the upper classes of society, and some worked hard in the underworld. The 14 essays contain different issues and string the atmosphere of the whole society at that time together, including food and drink, living lifestyles, leisure and entertainment, and so on. In this study, it figures out the taste and fashion from literature points of view and focuses on the arts of food and drink immersed in the novel. Also, it elucidates the real imagery of the philosophy on food arts and the diversity of cultures on leisure and entertainment related with food and drink during that period. The results show that the author with metonymy by food and drink cherished the past time and expressed the fatalism with metaphor by tea and wine.
