近年來,中國居民不論在飲食習慣、飲食結構與營養攝取方面均有顯著的變化,而目前中國居民正面臨著營養缺乏與營養過度的雙重挑戰。為探討影響中國居民飲食習慣、飲食結構與營養攝取變化之原因,本研究係採用分量迴歸之分析,以中國疾病預防控制中心營養與食品安全所與美國北卡羅來納大學人口中心共同合作之中國健康和營養調查(China Health and Nutrition Survey)為資料,進一步探討中國成年男性與女性營養素攝取是受到何種因素的影響。研究結果發現,對於高營養素攝取之族群,易受到外食程度的影響而產生變化,而對於低營養素攝取之族群來說,其易受到教育程度、保險、外食程度與飲料的影響而產生變化。
Considerable changes in diet habit and structure have been evident among Chinese households due to a rapid growth in economics. To investigate the factors that are associated with Chinese households’ nutrients consumption, this study applying a quantile regression method on the Chinese micro-level data drawn from the China Health and Nutrition Survey. Results show that food consumption away from home is one of the significant determinants of nutrient consumption of individuals with higher nutrient intakes. For individuals with lower nutrient intakes, education, access to health insurance, food consumption away from home, and beverage consumption are significant factors.
