With the commercial and industrial development, people change the lifestyle and the habit of eating. With the time of the activities during the night got longer, we have a stronger need of eating at night. In Taiwan, there is a lot of variety of midnight snacks, it shows that the custom of eating midnight snacks has got popularity in this country. But among them,soy-milk shops are the most special categories. While providing mostly soy-milk, sesame seed cake, and fried bread steak, known as Chinese breakfasts, they operate on night and the morning. The operating hours lead to the curiosity of the researcher. Why do these soy- milk shops operate on these hours? According to this, the research tries to discuss the development and progress of the soy-milk shops at night by textual analysis and interviewing as studying methods. By dietary text, the researcher clarifies the development of Taiwanese midnight snacks and the factors of the development. By interviewing store owners and customers, the researcher presents the development of the soy-milk shops at night in Siaogang and Cianjin Districts of Kaohsiung City.
