桃園縣某國民中學學生飲食行為及其相關因素之研究

摘要


本論文旨在瞭解國中生之飲食行為。並探討其個人背景因素變項、自覺體型、自覺健康狀況、健康控握信念與飲食行為的關係及飲食行為的預測因子。以桃園縣某國中九十七學年度第二學期之全體學生為研究母群體。採分層集束隨機抽樣,抽出 8個班級,有效問卷為 269 份。本研究以「飲食行為量表」、「健康控握信念量表」為研究工具。所得資料以描述性統計、t檢定、單因子變異數分析、皮爾森積差相關、多元迴歸等統計方法進行分析。 本研究結果如下: 一、研究對象的飲食行為良好,飲食行為表現中較好的三項分別是: 每天吃早餐、運動後喝白開水止渴、每天攝取適當熱量的食物。 表現較差的三項分別為:我每天喝牛奶、喝含糖飲料、我喝鋁 箔包裝。居中的有:每天吃宵夜、每天至少補充 1500cc 的水分、 吃油炸類食物、每天吃三份青菜、每天吃零食、每天吃二個水果、 吃東西時,會添加醬油、辣椒醬、番茄醬等調味料。 二、飲食行為會因「性別」的不同而有顯著差異,女生比男生有較好 的飲食行為。而年級、自覺體型及自覺健康狀況三項背景因素則 與飲食行為上並無顯著差異。 三、研究對象越傾向內控型健康控握信念者其飲食行為越好。 四、可以有效預測飲食行為的因子,有性別及內控型健康控握信念兩 個變項,即女生和越傾向內控者的飲食行為越好,共可解釋飲食 行為變異量的 9.5%。

The purpose of this study was to probe into the dietary behavior of students in junior high school in Taoyuan County. Participants of the research are from the whole first and second graders in the second semester in 2008. It explored the relation with personal factors, perception of body-weight, perceived health status, Health Locus of Control, dietary behavior and the predictors of the dietary behavior. A total of effective questionnaires are 269, which is by random sampling in several classes and times. The measurements of the research consist of dietary behavior and Health Locus of Control. Data is analyzed by statistics which include frequency description, t-test, One-way ANOVA, Pearson product-moment correlation and multiple-linear Regression. The results indicated that: 1. In terms of the dietary behaviors, the overall dietary behaviors of the subjects are fairly good. Subjects having good eating behaviors take breakfast every day, have sufficient intake of water after exercise, have suitable thermal food every day;furthermore, it’s found that few subjects indulge in sugared drinks and dislike milk every day and drinks the foil wrapper. Subjects having second dietary behaviors include:having a night-time snack every day, have sufficient intake of 1000c.c. water、eats fries in oil kind of food、have three green vegetables per day、between-meal snack every day、have two fruits per day、when eats will increase sauce. 2. Dietary behavior was significantly different among the students with different genders. Female students were better than male students. Dietary behavior was not significantly different among the students with grades, perception of body-weight, perceived health status. 3. Subjects having better internal health locus of control and prone to have better dietary behavior. 4. The major predictors of dietary behavior could be “genders” and “internal health locus of control”; the female and internal health locus of control have the inclination to better dietary behavior. They could explained the variance of 9.5%
