食品工業的發達,使得市面上充斥著琳瑯滿目的精美食品,然而不肖商人為了一時的利益,竟枉顧消費者利益與健康,製造與販售各種黑心商品。而近幾年食安事件更是頻繁,黑心食品、食品標示不實或者添加物超標等食品安全問題甚囂塵上,食品安全事件使的食品企業失去消費者的信任,伴隨而至的問題包括產品滯銷、下架甚至是訴訟賠償,都讓企業蒙受巨大的損失。觀察近幾年的食品安全事件,食品業除了需要做好自身食品安全管理之外,也需具備快速反應外界狀況之能力,以避免損失持續擴大。而面對瞬息萬變的外部環境,食品企業該如何管理這些不可預期的風險應是值得探討的議題。 本研究針對上述之問題,採用設計科學研究方法進行研究,並運用文字探勘技術與字串模糊比對建構食品安全關鍵字本體,藉由關鍵字本體與食品安全新聞的比對,自動分析食品安全新聞之風險,接著本研究利用資料視覺化技術將風險資訊以圖像的方式表達風險變動的趨勢,目的是希望管理者可藉由本系統得知企業外部風險變動的狀況,並搭配行動化平台突破地理限制,讓管理者可隨時隨地根據這些資訊進行企業內部的風險管理,使風險不致超過企業之風險胃納。最後透過三個階段的實驗,驗證本研究系統運作的正確性與機制的有效性,接著證明本研究系統之感受有用性、易用性與資訊滿意度。 根據實驗結果顯示,透過氣泡圖進行風險資訊的視覺化比人工閱讀新聞有較好的能力看出風險變動的趨勢,此外本研究系統在整體上也具備良好的感受有用性、感受易用性與滿意度,由此證明本研究機制有助於使用者辨識風險之能力。
In recent years, food safety events more frequent. Food safety incidents so that food companies have lost the trust of consumers, and to the accompanying problems include sluggish sales, even lawsuits for compensation, let companies suffered huge losses. Observe food safety incidents in recent years, in addition to the food industry need to do their own food safety management, but also need to have rapid response capability of the external situation, to avoid losses continued to widen. In the face of rapidly changing external environment, how food companies manage the unexpected risk should be worth exploring these issues. In this study, we use design science research methodology and use text mining with fuzzy match to construct the food safety keyword ontology. Match the news with the food safety keyword and automatic analysis the risk of food safety in the news. Then this study will use data visualization to visualize the data of food safety risk data. And use mobilization to make the system can breakthrough geographical constraints, so the manager can manage the risk anytime and anywhere. Finally, we experiment the mechanism through the three stages of the experiment to verify the mechanism of this study. The experimental results show that the risk of information through visualization and bubble chart has a good ability to find the trend of changing risks. And this mechanism have a good perceived usefulness, perceived ease-of-use and satisfaction, this result prove the ability of this mechanism helps users identify risks.
