芭樂中鉀含量及其營養成分測定

摘要


芭樂是台灣常見的水果之一,營養豐富、價格低廉、食用方便,可以說是唾手可得,芭樂含有豐富的營養成分。在八大營養成分中以礦物質可以維持體液酸鹼值、調節細胞通道和神經物質傳導,鉀離子可以協助動物生理作用,利用鈉鉀幫浦來維持細胞生命,礦物質和人體健康關聯性相當重要。台灣種植芭樂的歷史悠久,產地本以高雄燕巢為大宗,近年來彰化社頭鄉也迎頭趕上,每五顆就有一顆來自彰化,芭樂品種幾經改良,目前種植果肉細緻、果皮薄、口感清脆、口味香甜的珍珠芭樂為主。 本研究取自彰化縣社頭鄉一帶生產的珍珠芭樂、水晶芭樂和紅心芭樂,利用原子吸收光譜儀,針對芭樂中所含的鉀成分進行分析,結果經由計算後每100克珍珠芭樂肉乾燥後的K含量為352.32 mg,每100克水晶芭樂肉乾燥後的K含量為276.2 mg,每100克紅心芭樂肉乾燥後的K含量為667.8 mg。 本實驗以公告方法進行測定芭樂中的八大營養成分,八大營養成分檢測結果顯示,每100公克的珍珠芭樂熱量為67.5大卡,脂肪有1.1公克,而碳水化合物有9.7公克、糖有5.7公克、鈉有23.4毫克、灰分有0.3公克,水分有84.2公克為最高。

Guava is one of the common fruits in Taiwan. Nutrient rich, low price, easy to eat, Guava can be said to be at your fingertips. Minerals in the eight major nutrients can maintain body fluid pH, regulate cell channels and nerve material conduction. Potassium ions can assist animal physiology. Using sodium and potassium pumps to maintain cell life, the correlation between minerals and human health is very important. Taiwan has a long history of planting guava and Yanchao district in Kaohsiung is the main original place. In recent years, Shetou township in Changhua has also caught up and one out of every five comes from Changhua. After several improvements for the variety of guava, at present, pearl Guava is planted with delicate flesh, thin peel, crisp taste and sweet taste. This study was carried on Pearl Guava, Crystal Guava and Red Heart Guava all produced in Shetou township, Changhua county. Using Atomic absorption spectrometer to analyze the content of potassium in guava. In the results, the potassium content of Pearl Guava dried meat was 352.32 mg per 100 grams. The potassium content of Crystal Guava dried meat was 276.2 mg per 100 grams. The potassium content of Red Heart Guava dried meat was 667.8 mg per 100 grams. According to the announcement of experimental methods to determine the contents of eight-major nutrients in Guava, the results showed 67.5 calories, 1.1 g crude fat, 9.7 g carbohydrate, 5.7 g sugar, 23.4 mg sodium, 0.3 g ash and 84.2 g water at the highest content.
