Chinese Abstract

大豆種子的貯藏蛋白主要由2種球蛋白組成,伴大豆球蛋白(conglycinin)是其中一種,它由3個不同的亞基組成。文中對伴大豆球蛋白進行了分離純化,並研究了其體外經過胃蛋白酶水解後的肽對雙歧桿菌增殖的影響。結果表明,分離純化的伴大豆球蛋白純度為90.13%,可供生理功能的研究,經胃蛋白酶水解後的肽能夠促進雙歧桿菌的增殖,表現出一定的生物活性作用。

English Abstract

The major soybean storage proteins are two globulin, one of these globulins is conglycinin, which consists of three major subunits. In this study, we separated the conglycinin from soybean and investigated the properties of the peptide derived from pepsin digest of conglycinin. The in vitro experiments showed, their activity on the growth of Bifidobacterium longum. The purity of conglycinin separated from soybean is 90.13%, which can also be used for the study of physiology.
