台灣傳統白糖製造技術與其關鍵陶質工具

Pottery-made Tools and Traditional Ways of Manufacturing White Sugar in Taiwan

摘要


本文可分為兩個部分,第一個部分是針對白糖製造技術之發展源流,以及台灣傳統白糖製作過程、產品的種類、產業技術分工進行討論。第二個部分是探討糖漏(瓦溜)、漏罐(漏碨)、圈座器(藁座)等相關陶質工具;筆者檢視近年台灣南部地區發現的相關考古出土品,並配合文獻資料的比對,確定了此類陶質工具的名稱、形制、用法,及其在台灣早期糖業史與窯業史上之重要性。

Firstly, this study focuses on the traditional refining techniques of white sugar in Taiwan. It will discuss the origin and development of refining techniques of sugar, and the process of manufacturing white sugar, varieties of sugar products, and labor division of its relevant industries. Secondly, this paper is to explore the relevant ceramic implements of refining white sugar, including sugar drainer (conical earthenware drainer) drainage jar and pottery ring-base. The author will examine recently discovered pottery remains with archeological value in Southern Taiwan. Comparing with historical literature, these archeological remains can be ascertained and justified their names, forms and usage. By doing these, we can understand the significance of these ceramic implements in sugar-producing industry as well as ceramic industry.
