本研究以三位接受過二專餐飲管理科之三明治教學,畢業五年以上,目前仍在餐飲業工作且擔任餐廳中階主管的職位之畢業生爲對象。以質性研究之半結構式深度訪談法爲主,並實地至受訪者工作的餐廳作非正式的觀察爲輔,瞭解其完整的求學與工作歷程、家庭的影響及個人的特質等,以揭示在餐飲業發展的心路歷程與對未來生涯的規劃。分析策略採取主題分析法的步驟,以五個主題分析的結果來詮釋餐飲管理科畢業生在餐飲業發展留任的歷程:1.工作經歷的影響;2.工作的態度;3.餐旅教育的影響;4.生涯的規劃;5.工作與家庭。並提出對身爲餐旅教育者的省思、人與組織互動的意涵及生涯規劃的意涵之反思。
In this research, the objects are three Food and Beverage Management majored college graduates implementing the Sandwich Course, having graduated for over five years, current position as a middle-level supervisor in foodservice industry. The Qualitative semi-structural depth interview is employed mainly, making informal observation in the restaurants that the interviewees work to be complementary, in order to understand the intact course of attending school and working, the influence of family and personal characteristics, and so on. Furthermore, to proclaim the scheme and the future career development in foodservice industry. The analysis tactics adopt the steps of thematic analysis approach to interpret the course of Food and Beverage Management majored college graduates retaining in foodservice industry in the following five themes: 1. The influence of working experience; 2. The attitude of the work; 3. The influence of hospitality education; 4. Career planning; 5. Work and family. And, to put forward to the reflection as a hospitality educator, the interaction between people and organizations, and the reflection to career planning.
