Solid-phase microextraction (SPME) is a technique with functions of sampling, extracting and concentrating based on adsorption/absorption-desorption equilibrium between coating and sample. It is a simple , fast, highly sensitive ,economic and solvent-free sample preparation technology. This paper describes the structure, principle including equilibrium theory as well as equilibrium theory and sampling method of solid-phase microextraction. Especially the optimum extraction parameters include fiber , extracting time and extracting temperature were introduced. Its applications in environmental analysis, drug analysis , food analysis and flavor analysis were reviewed.
