Chinese Abstract

秋葵(Abelmoschus esculentus)為亞洲常用食蔬,經研究證實秋葵具有抗腫瘤、抗氧化、抑菌性、抗過敏、降血糖以及降膽固醇等生理活性,但文獻上對秋葵萃取多醣是否可做為益生菌保護劑卻相當少見。 本研究利用Abelmoschus esculentus (L.)做為多醣萃取來源,探討秋葵多醣體成分是否能提升Bifidobacterium longum MYL16於冷凍乾燥下之存活率,以及在人工腸胃道試驗中提升其對胃酸及膽鹽之抵抗能力。 實驗結果顯示,添加20% Abelmoschus esculentus (L.)多醣混合10%或20%的脫脂牛奶,可維持Bifidobacterium longum MYL16長達八周的保存,此外,在冷凍乾燥儲存試驗中,添加多醣之試驗組其存活菌數高於未添加多醣之控制組。本研究證實了藉由添加秋葵多醣,可以提升龍根雙歧桿菌於冷凍乾燥下之存活率,改善龍根雙歧桿菌對胃酸及膽鹽的抵抗能力之外,以及增進吸附Caco-2細胞能力及免疫調節能力,秋葵多醣確實具有開發益生菌保護劑之潛力。

English Abstract

Abelmoschus esculentus (L.) Moench is one of commonly used vegetable in Asia. It was established that the Abelmoschus esculentus (L.) Moench has an anti-tumor cancer, antioxidant, antibacterial, anti-allergy, blood sugar/cholesterol lowering, and other bioactivity. It is little is known that okra polysaccharides can be used as probiotics protective agent. In this study, Abelmoschus esculentus (L.) Moench as a polysaccharide extracted source, to discuss polysaccharides extracted from Abelmoschus esculentus (L.) Moench can improve the survival rate of Bifidobacterium longum MYL16 under freeze-drying and enhance its ability to gastric acid and bile salts of resistance in artificial gastrointestinal tract. The result shows that adding 20% Abelmoschus esculentus (L.) Moench polysaccharide mixed 10% or 20% skim milk can maintain Bifidobacterium longum MYL16 activity for eight weeks. In addition, add a polysaccharide of the test group survival bacteria higher than the group did not add polysaccharide in freeze-drying test. This study confirms by adding okra polysaccharides can improve survival rate of Bifidobacterium in freeze-drying. It can improve Bifidobacterium to resist gastric acid and bile salts and also improve adsorption of Caco-2 and immunomodulatory capacity. Abelmoschus esculentus (L.) Moench has tremendous development potential of probiotic protective agent.
