冰溫儲存系統對於改進農產品儲存之研究

摘要


本論文旨在於研究一種新穎性的保存食材用品方法-保存物品低於其冰結點,但是又不能使其結冰的一種方式。這種保存方式可以長期保存物品的新鮮度、完整度,但又不使其變質的一種方法。這個保存技術的主要關鍵在於如何準確的取得冰結點溫度以及超冰溫的溫度區間,在本論文中,我們將自行建立一套量測保存物品的冰結點與超冰溫區間的自動化量測系統,一般物體的導電係數應呈現與溫度成線性(或指數)反比的現象,當物品結冰時,由於結冰造成結構的驟然改變,因此其電阻在結冰的一瞬間將會與結冰之前不同,而呈現明顯的變化,因此我們不需要再如同一般研究者一樣,需要將試片由冰箱中取出至於顯微鏡下觀察冰晶的產生,所以使用本系統進行樣本的冰結點及超冰溫區間的量測,將會相當簡易而且準確。為驗證本論文的可行性,本論文將利用自行設計製造的冰溫系統,測量肉塊的冰結點與冰溫區,並利用微生物檢驗方式的總生菌數檢驗方法(CNS 10890),藉以評估冰溫儲存對於抑制生菌生長的結果,本論文並比較各種儲存方式,包括室溫(攝氏25度)、冷藏(攝氏4度)、冰溫(攝氏-3度),對於豬肉生菌數成長與其色澤的效果,也進行各種儲存方式對於蔬果保鮮的表現,結果皆顯示冰溫儲存可以長時間且不結冰地儲存生鮮產品。

A novel application of hyoon system is studied to preserve agricultural products in this thesis. The term hyoon is to keep the material below its freezing point without ice crystal formation. The key issue is their hyoon storage ranges various agriculture products. In this thesis, an automatic system is be setup successfully to monitor the supper control freezing zone, hyoon that is, and the temperature variation. This system could acquire the freezing points of various agriculture products as well as their hyoon storage range. The principle of this system is the change of structure could affect sample’s conductivity. Typically, the conductivity coefficient is inversely proportional or exponential to its environmental temperature. Due to the preservative products has frozen solid, the conductivity also changes suddenly. From the ohmic law translation, this system could monitor the conductivity variation by current or voltage. In order to monitor the storage quality, shelf life test of different temperature on 25℃, 4 ℃ and - 3℃ were carried out for the system adaptation. Moreover, the total bacterial count was used as indicator for food hygiene. The result indicated the device we developed can accurately indicate the hyoon region, therefore, it is possible to be used as measurement equipment. The results also showed the food products kept in hyoon condition can not only kept from been frozen. The color alteration also indicated the prolonged hyoon preservation period can keep the longest as-fresh condition for agricultural products.
