小吃在鹿港的休閒魅力

摘要


隨著時代的改變,休閒活動也跟著多變萬化。其中飲食方面被普遍的接受,被視為一種單獨的休閒型態。地方小吃因具有便宜、地方性強、及具有特殊風味等特色,所以特別受到重視,小吃不僅是維持生活基本需求,最重要的是能帶給遊客愉快的休閒感。 本研究以鹿港的小吃為研究主軸,透過文獻回顧和耆老的訪談方式釐清鹿港小吃的源流,並對遊客、當地居民、公部門、學者、當地文史工作者和業者進行資料的收集,以探討鹿港小吃有何條件足以讓品質與種類比一般地區精緻與多元呢?小吃對旅客的吸引力又是什麼?以及品嘗小吃的休閒體驗又是什麼?還有探究小吃對鹿港現今休閒產業有何影響?再對小吃帶給遊客的深層的意涵加以探究。 資料收集之後,採樣版式、編輯式、融入/結晶化分析法,一再的回到文本進行檢視修訂之後再進入詮釋階段。將文本安放在詮釋的架構內加以表達。 研究發現鹿港因有經濟繁榮的基礎與文人雅士的文風助長,及私人廚師與「刀煮」的遁入民間和宗教祭祀的另一面促使鹿港小吃種類繁多與精緻化。而小吃的萬花筒世界則充滿了吸引力和新奇性、受到當地旅遊氛圍所感染及變成是一種社交的場域。且小吃具有真實性、的體驗也可體驗當地的文化與民情更可以豐富旅遊記憶,是一項體驗當地文化的最佳途徑。而小吃產業也為鹿港帶來富裕的經濟和文化產業的提升,研究還發現小吃具有一種品味展現與擬像與和平民的炫耀性趨近社會觀。藉此研究,解讀地方小吃的意象,並開拓休閒產業的新視野。 關鍵字:遊憩體驗、真實性、懷舊、炫耀性心理

In recent years, every kind of recreational activities is growing up thrivingly. Gourmet becomes the most acceptable enjoyment because of its’ simple fashion. Gourmet not only satisfies the basic requirement of our lives, most important of all, it brings enjoyable recreational experiences to the tourists. Regional local delicacy is the most significant example. Generally, local delicacy has three characteristics, fairly pricing, regional, and unique flavour. Recently, it has become one of the most popular recreations. Why local delicacy is so attractive to tourists? What makes the tourists want to try the local delicacy? In the aspects of the domestic economics, what benefits does local delicacy bring with? Redirecting from the physical aspect of “eating only meets physiological need”, the purpose of this study is to explore the psychological aspect of local delicacy. This study will focus on Lu-Kang area to demonstrate the importance of local delicacy to the recreational industry. In addition to the literature review, some local respectable senior have been consulted to clarify the establishment of local delicacy in Lu-Kang area. Besides, the study also includes in-depth interview with tourists, local residents, public offices, academia, and local artists for further investigation into the role of local delicacy in current recreation industry for this region. After all the materials are collected, Template Analysis Style, Editing Analysis Style and Immersion/Crystallization Analysis Style are used in this research. It has been found out that the remembrances of the childhood are involved in tourists’ motifs. They intend to preserve the tradition, proud boast, curiosity, and influences under expedition surroundings. Meanwhile, local delicacy is also full of reality, novelty, and common encounter. Further more, through local delicacy, tourists can both understand the domestic culture and customs more, and enriched their travelling memories. It is the best way to explore the domestic culture and advancement of art. We can say that local delicacy not only brings economic benefits but also helps promoting the regional art industry. It is anticipated to elucidate the image of local delicacy as well as to widen the vision of recreation industry. Further more, I wished this study can be a reference case for the development of tourism and recreation. Keywords: recreational experiences, reality, old fashion, proud boast
