台灣餐飲空間室內設計形式的趨向

摘要


台灣餐飲空間在現代化的進程下,呈現多元發展趨勢。顧客上餐館不單純僅只是吃飯而已,更在意的是享受餐飲空間所提供的用餐氛圍,故餐飲空間設計的形式表現有其重要性。本論文以內容分析法,探究其室內設計形式、風格,企圖瞭解當今台灣餐飲空間室內設計形式的主要趨向。首先蒐集台灣2000至2009年所發行之室內設計雜誌,選取有關餐飲空間報導共105個案例為研究樣本,其次依據文獻探討建構形式類目,最後內容分析。結果發現:1.空間感明顯表現出開敞的,2.空間立體形態多數以規則幾何構面來展現,僅少數採用曲面造形。3.目前台灣餐飲空間設計風格偏向國際形式,且以簡單垂直水平線條及適量的裝飾來展現。4.材料質感的使用大部分以木材為主,其次為玻璃及金屬。5.色彩的處理,趨向以紅色、黃色來突顯視覺焦點,在大面積色彩的舖陳上,則以無彩色及木材自然紋路色彩呈現,而整體色彩以低明度、中彩度為主。6.照明設計,明顯積極利用自然光源,以及充分利用照明的技術來呈現空間氛圍。7.明顯注重藝術佈置,但室內綠化應用的並不多。

In Taiwan, the interior design work for restaurants performs a variety of styles. The customers not visit restaurant only for resolving their physic hunger, but also for enjoying the pleasing atmosphere of interior design space. The issue of this thesis is dedicated to analyse different styles of restaurant interior design. Through the contents analysis method, we define different styles by classing their forms, colors, decoration, as well as furnish. In order that we realize the recent tendency of interior design work at the restaurant business of Taiwan. First, we collect the magazines of interior design during 2000 to 2009, and select 105 cases about restaurant space reports as the samples of our study. The next, we set the forms and category according to documents discussing. The last, we generalize the conclusions according to the content analysis results. The conclusions present as following: 1. The sense of space represents open and widely. 2. The three-dimension styles of space mainly present regular geometry structure, only few adopt curve structure. 3. Recently, restaurant interior space design is partial to international form, as simple vertical and horizontal lines combine suitable amout decoration. 4. The texture of material mainly used is wood, the next are glass and metal. 5. As the hue, it is manifestly partial to focus on red, yellow and warm color tones. And it applies non-hue colors and is partial to present the nature veins of wood on huge area. As the whole, the hue mainly inclines to low value and medium chroma. 6. As the illumination design, it apparently employs nature light, and adequately use the technique of illumination to display atmosphere of space. 7. It apparently emphasizes on artistic decoration, but few on application of interior afforesting.
