國內空廚業餐車派遣模式建立之研究

摘要

在全球化分工的產業型態下，各地區間的關係變的非常密切，因而提高了對客貨運輸的需求，尤其是在人員的往來上，為了節省運輸時間或避免旅途的勞累，多數人會依各自的需求選擇適當的交通工具，而在各項運具中，飛機的速度是最快速且最舒適的。因此航空產業順應此一發展趨勢，逐漸變成為大眾往來各地快速且密不可分的交通工具。
據此，民眾對於機上的服務品質必定成為其選擇航空公司的關鍵因素之一，而機上餐點為中長途旅程中必備的要件，是故班機上的餐點為航空公司吸引顧客搭乘重要項目之一，由於傳統航空公司之各國際線航班不論航程長短，均需要配送餐點，因此空廚中心餐點配送至飛機上之過程中，飛機的地面作業流程中顯得非常重要，本研究所欲探討之空廚業餐點配送為包含回程收餐之問題，並主要考量如何降低餐車行駛及作業的時間等兩種成本，俾能提高餐車配送的效率，以達到餐車運送及作業總時間最小化之營運目標。
本研究以C#程式語言撰寫，利用遺傳演算法求解。藉由本研究可求解出最小總成本，並透過實驗設計與實証研究來進行分析探討，結果顯示，餐車連續服務航班需求點個數達到三個點為最佳，且隨著承載率的增加，餐車配送所需的總時間也會隨之增加，當車容量越大時，所需之總成本會逐漸降低。最後，期能將本研究之成果裨益於相關業者以及未來後續研究工作者之參考。

In the globalization, each region has extremely close relations with others. So, we have the transportation demand, especially in personnel's. In order to save the time of transportation or avoid the fatigue in journey. Most people would choose suitable transportation vehicle depend on their demand. Airplane is the fastest and most comfortable transportation. Airplane is inseparable from people.
The service quality would be the key factor of attracting passenger, so the catering on the airplane would be the important factor. No matter long haul or short haul. All of they need the catering. So, it’s very important for the catering operation and transportation. The study vehicle scheduling problem between airport and catering center and supposes that flights have the requirements of deliveries, pickups meals at the time. This will be under the limitation of the capacity of the vehicle and the time of serving flights should be in the defined time window to make the vehicle finish the serving in the lowest cost.
This study will offer the revising mode of mathematical scheme, the analysis of the solutions and the suggestion. We expect to resolve the vehicle scheduling problems and help to apply in practical.
