手工巧克力在台灣的現況與發展

摘要


巧克力看似平凡,它是西方世界中歷史悠久且角色多元的重要食材。2006年以來,手工巧克力在台灣蓬勃發展,不僅改變台灣人對於飲食的習慣,更扭轉台灣人對於巧克力甜膩、不健康的刻板印象。巧克力是日常生活中頗具象徵意義的產品,表面上是西點的一種,亦在特殊節日中表達人際關係情感之聯繫,影響台灣人對於巧克力的定義與價值,並且簇擁著巧克力產業在台灣迅速發展。本研究主要藉由巧克力收集相關書籍與國內外學者的論文資料,匯整後充份瞭解巧克力的相關專業知識。並且依序針對巧克力的歷史起源、巧克力的製造、 巧克力的研發、台灣巧克力產業發展、關於巧克力的迷思之科學解釋討論。最後將以巧克力在世界及台灣的產業發展為基礎,透過與台灣各地共五家手工巧克力業者深入訪談瞭解手工巧克力之定位及實際生產與消費現況,並將訪談資料加以整理歸納,進一步提供手工巧克力未來在台灣的新思維。

Chocolate is a kind of ordinary food. In fact that it is to have a long history, and play a very important role in the food sector. Since 2006, handmade chocolates are flourishing in Taiwan. Handmade chocolates not only change Taiwanese eating habits, but also to reverse the sweet chocolate, unhealthy stereotype. Chocolate is a type of symbolic significance food in our daylily life. Seemingly, chocolate is not just a part of dessert, but it also can show the expression of emotional in the special festivals, influence the definition and value of the chocolate in Taiwan. Due to the above reasons, so that the rapid development of the chocolate industry in Taiwan. This study will collected by chocolate related books and papers of the domestic and foreign scholars in order to fully understand the Chocolate relevant expertise. And discussion for the historical origins of chocolate, chocolate manufacturing, research and development of chocolate, chocolate industry development and the explained about science on chocolate, sequentially. Finally, the keynote of this research will based on the development of the world and Taiwan chocolate industry to understand the positioning、the actual production and consumption current situation of handmade chocolates by the interviews with a total of five handmade chocolate stores all over of Taiwan, and provide the whole new thought for the future to handmade chocolates.
